The Zippy Southwest Salad Lunch

For years I worked in my mother's Southwestern cafe. We created some amazing soups and unique Santa Fe style recipes. This Southwestern Salad is based on one of the more popular dishes that we served. What I love about this salad (besides the taste), is how quick and easy it is to make. And it is one of those dishes that develop in flavor while sitting in your fridge for a couple of days! You've got to love scrumptious leftovers. (Video about 10 mins)

Experiment with different chopped veggies for variety--and I suggest trying some chopped avocado from time to time. Try this salad wrapped in a brown rice tortilla and covered in my GF Red Enchilada Sauce (featured in our Southwestern Cooking Course site), and baked in a 400 degree oven for 10 to 15 minutes. It makes for an awesome burrito!
