This is one of the most frequently asked questions that I get from folks that are getting off of, or avoiding, gluten. And it's a good one.
I've created recipes to answer this question AND pass 3 big tests:
- It needs to be quick and easy (even better if I can make extra and have some to last for a few days).
- It has to provide sustained energy... NO blood sugar crashes.
- It needs to taste good and be deeply satisfying.
Well, Tif's Oh So Healthy No-Bake Breakfast Cookies were born out of that! This is one of my favorite breakfasts created for Tiffany's Healing Foods Productions, which I am truly happy to share with you. Here are a few reasons (other than the ones listed above) why I love them so much:
- You can make a batch that will last you 5 days in less than 15 minutes.
- They are filled will several "super foods" the help to jump-start my day without the use of depleting stimulants.
- They are plump with those wonderful omega-3's that you hear so much about. They help support cognitive function, and decrease inflammation in the body (this equals less pain and disease, and more vitality).
- Knowing that they are "cookies," I must say, I feel like I am having a "treat" every time that I eat one... And they help create a healthy body weight!
