Creamy Cauliflower Soup in a snap!

Hi all,
I wanted to share with you this awesome soup that I created today.
I had several cups of roasted veggies left over in my fridge and I didn’t feel like eating them. Then I had an “ah-ha” moment… I could create a creamy soup!
It was about 3 cups of roasted (roast on 425 for 20 min, no oil) cauliflower, red bell pepper and sweet onion.
Here is what I did:
Put in a blender with 3 to 4 cups of water and 1/2 cup cashews.
Blended on high and added 3 tablespoons of extra virgin olive oil while blending until smooth.
Poured into soup pot.
Simmered and added Herbamare seasoning and pepper.
Served it up and savored the creamy goodness!
Can’t think of anything better for this gloomy, cool, Seattle day.
