3 or 4 peeled,cored and quarted apples. (make sure you use a good cooking apple like golden delicious,granny smith,fuji,jonathan,mcintosh, gravenstein)
4 strips of lemon peel—use a vegetable peeler to strip 4 lengths
juice of one lemon or 3-4 Tbs
3 inches of cinnamon stick
1/4 c. of dark brown sugar
up to 1/4 c. white sugar
1 c. water
1/2 teaspoon salt (or sea salt)

put all ingredients into a large pot. Cover.Bring to a boil. Lower heat and simmer for 20-30 min.

Remove from heat. Fish out cinnamon and lemon peel. Mash with potatoe masher.

Serve hot or refrigerate.
Freezes easily, lasts up to one yr in freezer.

    Have you ever tried it without the sugar? I was thinking about trying it with pureed dates.
