Chocolate Sunflower Truffles: Elimination Diet Foods ideas from Tif and Darren
Discussion Actions
So here we are on the 4th day of the Elimination and Detox diet!
I wanted to share what Darren and I ate today.
Darren’s modified detox program:
breakfast was Nutty Rice cereal with unsweetened almond milk.
lunch: lentils with brown rice and raw veg sticks. Darren actually made the lentil soup!! I had a talk with him a couple of nights ago and explained that I am too busy to make his food and mine (he doesn’t like all the green veggies I eat!). And that if he really wanted to do this, he needed to step up and make his own food…. and he did!!
Snacked on sunflower seeds mixed with raisins, and fresh apples.
Dinner for both of us was fantastic! I sauteed some onions and mixed those with a little brown rice, then put that and shredded veggies (carrot, diakon radish, broccoli stem) and sliced avocados into a brown rice tortilla wrap. Tasty!
Fresh cantalope for dessert.
Tif: Green smoothie for breakfast (kale, green apple, melon, scoop of rice protein powder and water). It was wonderful!
Lunch was lentil soup with cultured veggies, pumpkin seeds, olives
Snacked on currents and sunflower seeds.
Made an awesome concoction. You’ve got to try this! Chocolate Sunflower Truffles
Mix 3/4 cup raw or dry roasted sunflower seeds with 3/4 to 1 cup packed, pitted, fresh Majool dates, and 1 /2 tablespoons cinnamon, and 1/2 cup GF cocao powder (I used Dogoba brand) in a Food Processor. Blend until well mixed (2 min or so). You should be able to form little balls that stick together in your hand. Roll into truffle sized balls. Dust with more cinnamon. Yum!
Dinner same as Darren.
For tomorrow: I have some asparagus marinading in sesame oil and Ume plum, and I have black beans soaking. I am also soaking some brown rice overnight to make Nori Rolls tomorrow…
