We have entered phase II here as well. Darren never really had a phase.. he is just sticking with the no gluten, dairy, corn, soy, sugar for the entire time. And I must say… that is a HUGE deal!! I have never seen him go longer than 6 hours without bread and cheese! :)
He is doing so well. He even steered clear of of eating some soup when out with friends because he knew it may contain ingredients off the diet. When he goes on his 75 mile bike rides he takes Lara Bars, or Raw Revolution Bars. Go Darren!
I did have some sushi 2 nights ago. I have to say, it actually really affected my sleep, and not in a good way. i week into eating such simple and pure food has sensitized my system (in a good way). I am much more able to hold subtlty and feel extremely light and bayonet. I can see better. This is because the liver helps regulate eyes (in Chinese Med) and the liver loves green stuff… and I am eating a TON of green stuff!!
I have been having a green smoothie everyday (usually breakfast) that has a bunch (a whole bunch!) of kale, sour green apple, some pear, and some rice protein powder. I also put elderberry juice concentrate in there. The vita mix blender works wonders on this concoction.
Yesterday we had lentils. Today I made the rest into a soup with some veggies inside. We’ve been munching on raw cucumber slices, radish and carrots. I got a Korean radish at the Asian market. I think its called Kombo. It looks like a giant turnip and tastes so refreshing and slightly pungent.
Over the weekend I munched on asparagus, blanched with sesame oil and ume plum, arugala, and black beans.
I’ve been making a new pot of sticky brown rice every other day. I just leave it going in the rice cooker on warm for a couple of days. Its great with Chinese Five spice, olive oil and dried currents for breakfast. the other day I had some for lunch with sliced avocados and raw greens on the side. Tasty!!
I made a pumpkin seed pesto the other night and put it on top (bottom side) of roasted portabella mushrooms. Tastes a bit like pizza!
Tonight I think I’ll have a green smoothie as I have not had one yet. I’m going to try cabbage and parsley in it! I’m making Darren baked fingerling potato fries topped with a “cheese” that I make out of ground up macadamia and cashew nuts. And one of his “super shakes” which is a plant based protein shake with berries and unsweetened almond milk. He’s in a bike race tonight and will get home super hungry for carbs!
